Stage 1: Disinfection

Stage 2: Wort preparation and fermentation
- Add 1.5 liters of cool drinking water to the saucepan.

- Add 12 liters of cool drinking water to a clean fermentation vessel.
- Add the previously prepared wort.
- Dilute the defoamer in 50 ml warm water and mix well. Add half of the resulting solution to the fermentation tank and mix well. The rest of the solution will need to be added to the still before distillation.
- The wort is ready for primary fermentation.
- IMPORTANT! The final wort temperature should be no more than 35 ° C.
- Inoculate the surface of the wort with yeast evenly. For a better start of fermentation, it is recommended to pre-water the yeast.
- Close the lid of the fermentation vessel hermetically, install a water seal.
- Leave the wort to ferment in a dark place at a temperature of 25-32 ° C. The total fermentation time will be 10-14 days.
- Drain the mash from the yeast sediment.
Stage 3: Distillation
- The finished mash must be subjected to double distillation.
- Pour the mash into a cube and add the rest of the antifoam solution. Mix well.
- Carry out the first distillation at almost maximum speed at a still temperature of up to 98 ° С! (above this temperature, steam begins to condense).
- After the first distillation, it is necessary to dilute the resulting raw alcohol with cool drinking water to an alcohol content of 20-25% vol. **
- Perform a second fractional distillation with the separation of the "heads", "body" and "tails". ***
Stage 4: Ripening and bottling
- The resulting distillate must be diluted with cool drinking water to the desired strength (for the "Whiskey" set - 40% vol., For the "Polugar" set - 38.5% vol.). * Mix well.
- Pour into a container prepared in advance (glass jar, barrel, etc.).
- For the "WHISKEY" set, add the oak chips from the set (having previously infused it in boiling water for 30-60 minutes), tightly seal the container and send to a dark place for ripening. Ripening time 3-4 months.
- For the “SEMI-GAR” set, add activated carbon from the set. Within 12-24 hours, it is necessary to make periodic intensive stirring (3-4 times). Then leave the container alone for a few more hours to settle.
- Fill the drink into bottles using a funnel. The filter paper included in the kit can be used to filter the sediment. For finer cleaning, the use of cotton pads is allowed.
Step 5: The drink is ready
To increase the volume of the final product, it is allowed to use an additional 1-2 kg of unhopped wort TM "Svoya Kruzhka" or 1-2 kg of dextrose.
** To determine the required amount of water required to obtain the desired alcoholic strength, you can use the formula: (Нс / Кс - 1) * Vс, where Нс - initial alcoholicity, Кс - final alcoholicity, Vс - initial volume of alcohol. For example: You have received alcohol with a volume of 1.5 liters (Vc = 1.5). Initial alcoholic content - 76% vol. (Нс = 76). It is required to obtain an alcohol content of 40% vol. (Kc = 40).
Total: (76/40 - 1) * 1.5 = 1.35 liters of water must be added to the initial volume of alcohol.
*** "Heads" during fractional distillation are taken at low speed - drop by drop (approximately 1 drop per second). This fraction evaporates at approximately 85 ° C cube (or 73 ° C for steam). The total number of selected "heads" should be 100-150 ml. The selection of the "body" is carried out at an average speed at a temperature in a cube of 85-93 ° C. Separation of "tails" must be carried out at maximum speed at a temperature in the cube above 93 ° C.
